Southern Red Velvet

Hello guys! So for my first blog post I’m going to share with you my first ever Red Velvet recipe. I got into baking sometime around last year and after like three attempts I have fully mastered this recipe. It is super easy to make and will only take a maximum of about 2 hours of your time. It is perfect for dinner with family and a small get together with friends. Trust me, they’ll all come back for this moist and rich goodness.

For The Cake:

  • 300g all-purpose flour
  • 250g caster sugar
  • 150g softened unsalted butter
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 tablespoon red colouring gel
  • 200g buttermilk
  • 1 teaspoon baking soda
  • 1 tablespoon vegetable oil
  • 1 tsp salt

For The Cream Cheese Frosting:

  • 500g cream cheese
  • 30g unsalted butter
  • 1 teaspoon vanilla extract
  • 250g melted white chocolate
  • 100g sugar

  1. Preheat the oven to 180°C.
  2. Lightly grease a 9-inch round cake tin pan with unsalted butter
  3. Sift the flour, cocoa powder, salt and baking soda into a large bowl. Mix until well combined.
  4. In another bowl beat together the butter and sugar until pale and fluffy. Add the eggs one at a time.
  5. Add the vegetable oil, buttermilk, red colouring gel and vanilla extract into the butter-sugar mixture.
  6. Mix the wet and dry ingredients together and check for consistency (not too runny and not too sticky).
  7. Pour the mixture into the tin and bake for about 30-45 minutes until a toothpick inserted into the cake comes out clean.
  8. While it’s baking, create the frosting by mixing together the cream cheese, butter, vanilla extract, white chocolate and sugar. Leave in the fridge to cool.
  9. Once the cake has been removed from the oven, remove from a pan and leave to cool completely. Slice a thin layer off the top of the cake to create a flat surface. Use this for the crumbs. Frost and decorate!

Thank you for reading and I hope you loved it!
